Salad Days Redux (For Guppy)
I remember when salad was dinner.
Not because it was chic---
but because it was all
my paupers purse could afford.
Lettuce was iceberg---
maybe a few tomatoes,
and if I was really lucky
a cucumber
would be nestled in my crisper
to liven up the mix.
I worked at the dressing,
bleu cheese, italian, balsamic this or that
trying to make it all taste
like something new and different.
He came along with chick peas, olives, sprouts
and a little shredded cheese.
I was amazed at the grin.
I was astonished by the texture.
Together we added water chestnuts,sweet peppers,
and some carrots for color.
And then he suggested that we toss the salad a bit.
The rest, as they say is history.
